Pāhoa Rib Co. started with one dish at The Walua Social Club that simply refused to stay in the appetizer section. Since 2023, these black pepper ribs have become one of the most requested and talked-about dishes on the menu—so much so that we started joking that we had ruined ribs for everybody else. Eventually, the obvious question became: why not give them a place of their own? PRC is that place—built around the ribs people already know, crave, and keep coming back for.
